Super easy casserole

It's not Mexican, I know. That's why I merely called it a super easy casserole.
True Mexican food is not traditionally swimming in some obscure sauce & smothered in cheese. It boats big flavors from fresh ingredients, produce & herbs. Meats are often marinated & grilled, or roasted. Fresh limes, lemons, & peppers of many levels of heat & colors are always at the table for each meal as are flour or corn tortillas. Flat breads like these are intended to be eating utensils.

However, this dish brags items with Spanish named labels, but that doesn't mean this is a Mexican dish, but, it IS tasty none the less!

Everyone will have those busy days, & at the end of it all comes the million dollar question:
'What's for dinner?'
Well, here's something you can throw together to avoid that nasty question!

In a 9x13 pan layer the burritos, as many as you can fit, a little shredded cheese, enchilada sauce, & top with more cheese.
Cover with foil sprayed with nonstick spray so the cheese doesn't stick while baking.
Bake at 350° for about an hour, or until hot & bubbly through out.
Remove foil & bake about 10 min longer to brown the top just a bit.

There you have it! Super easy & very family friendly! :D

Oh, the burritos were not frozen before assembling. This can be assembled while the burritos are frozen, but I recommend keeping the prepared dish in the fridge until the next day. Then just pop it in the oven an hour before dinner time.
Also, this dish is freezer friendly. Assemble with frozen burritos & the rest of the toppings,  cover with plastic wrap, then cover with foil, & lable with contents & baking directions. Again, keep it in the fridge over night & remember to remove the plastic wrap before baking. ;)

Carrots & oranges

Thought it was a good idea to put the juicer to good use again. Carrot & apple juice is very delicious, not to mention that the nutrients are metabolized in 15 minutes! Crazy huh?
Well, since when have I been about healthy aspects of a diet, eh? I'm really about what tastes GOOD! ;)
But, if it happens to be healthy too,that's a bonus.
I had a real hair-brained idea:
I love oranges. I mean really, really LOVE oranges! So I thought I would throw it in my apple-carrot concoction, mmm..because oranges are delicious, & they do it in those infomercials, right?
Um, I have one word for you: PITH
Yea, that bitter part of the orange between the rind & its inner sweetness. Looks harmless enough but, wow! It packs a super bitter punch that lingers for hours!
I should have known better, but I'm not exactly known for clear-headed thinking! ;) 
There it is, a full glass of bittersweet ness! Ugh, down the hatch, gulp!!

Where's the pictures?

So, I was going to try to make a photo tutorial. It was going to be the laundry detergent I have been making for a couple of years now.  I very carefully photographed each step of the way so the directions would be easy to follow. Not that it's a hard recipe, I just wanted everything to be clear.
When it came time to put it all together, wouldn't you know? All the pictures have gone missing in action! Arrrg!! Really??
They are not on my handy little device, not on the laptop, they just disappeared.  x_x
Well, I guess that does it for the tutorial;
Step 1: carefully snap pics of each step
Step 2: DON'T lose the pictures!!
First tutorial? Nailed it!
